C\u2019est le doux m\u00e9lange de tous ces \u00e9l\u00e9ments qui a donn\u00e9 \u00e0 notre cuisine la vari\u00e9t\u00e9 de go\u00fbts et de contrastes qui lui sont propres et qui se mat\u00e9rialisent dans ce qu\u2019on appelle&nbsp;<strong>la cuisine de la mer et de la montagne<\/strong>.<\/p>\n<p style=\"font-weight: 400;\">Son principal secret r\u00e9side cependant dans&nbsp;<strong>l\u2019utilisation de produits autochtones<\/strong>&nbsp;et de bonne qualit\u00e9: le riz de Pals dont la qualit\u00e9 est l\u2019\u00e9l\u00e9ment de base d\u2019une multitude de plats ; la crevette de Palam\u00f3s et les poissons de la Costa Brava comme le poisson bleu ganx\u00f3 qui peuvent \u00eatre servis seuls ou accompagn\u00e9s d\u2019une garniture; les verdures et l\u00e9gumes, frais ou cuits, qui constituent les salades; les diff\u00e9rents rago\u00fbts, les daubes\u2026<\/p>\n<p style=\"font-weight: 400;\">Notre r\u00e9gion a lanc\u00e9 dans ce domaine une importante campagne de r\u00e9cup\u00e9ration des produits. La d\u00e9licate scarole de cabell d\u2019\u00e0ngel et le fesol d\u2019ull ros (sorte de haricot), par exemple, sont des produits typiques de l\u2019Empord\u00e0 dont la culture avait \u00e9t\u00e9 abandonn\u00e9e pour diverses raisons. Un groupe de mara\u00eechers de la r\u00e9gion a r\u00e9cup\u00e9r\u00e9 r\u00e9cemment ces produits qui peuvent d\u00e9j\u00e0 \u00eatre d\u00e9gust\u00e9s dans les restaurants de <strong>La Cuisine de l\u2019Empordanet.<\/strong><\/p>\n<p style=\"font-weight: 400;\">Notre r\u00e9gion offre cependant d\u2019autres produits typiques qui se distinguent tant par l\u2019utilisation de mati\u00e8res premi\u00e8res autochtones que par une \u00e9laboration tr\u00e8s ancienne : la botifarra dol\u00e7a (saucisse douce), les beignets artisanaux, la caillebotte et le fromage frais \u2013 ingr\u00e9dients id\u00e9aux pour pr\u00e9parer de succulentes salades et desserts \u2013, les diff\u00e9rentes sauces comme le sofregit et l\u2019ailloli\u2026 Les 12<strong>&nbsp;<\/strong><a href=\"http:\/\/www.visitemporda.com\/fr\/gastronomie\/30\"><strong>campagnes gastronomiques<\/strong>&nbsp;<\/a>qui sont organis\u00e9es dans la r\u00e9gion permettent de d\u00e9guster tous ces produits avec les particularit\u00e9s qui distinguent le style propre de chaque restaurateur.<\/p>\n<p style=\"font-weight: 400;\">Notre cuisine ne doit pas sa vitalit\u00e9 uniquement au poids de la tradition. En effet, elle est \u00e9galement&nbsp; le fruit de l\u2019innovation, de l\u2019exp\u00e9rimentation et de la cr\u00e9ation de nouveaux mets qui sont les vertus qui assurent la continuit\u00e9 d\u2019une culture culinaire.&nbsp;<a href=\"http:\/\/www.visitemporda.com\/fr\/gastronomie\/31\"><strong>L\u2019Atelier Gastronomique de l\u2019Empord\u00e0<\/strong>&nbsp;<\/a>est le principal centre qui promeut ces initiatives en pensant non seulement \u00e0 nos professionnels et aux habitants, mais \u00e9galement aux visiteurs qui souhaitent en savoir davantage sur notre cuisine et \u00e0 l\u2019intention desquels il organise pendant toute l\u2019ann\u00e9e.<\/p>\n<p style=\"font-weight: 400;\">Notre r\u00e9gion compte aussi avec&nbsp;<a href=\"http:\/\/www.espaidelpeix.org\/\"><strong>l&rsquo;Espace du Poisson de Palam\u00f3s<\/strong>&nbsp;<\/a>qui souhaite contribuer \u00e0 la diffusion, \u00e0 la durabilit\u00e9 et \u00e0 l&rsquo;utilisation en cuisine des produits de la p\u00eache arrivant a la cri\u00e9e de Palam\u00f3s, notamment en valorisant les esp\u00e8ces peu rentables mais d&rsquo;una grande valeur culinaire et gastronomique, et en faisant de la p\u00e9dagogie. De nombreux ateliers, des visites guid\u00e9es \u00e0 la cri\u00e9e et des show cookings sont propos\u00e9s por tous les publics. Nous vous recommandons aussi la visite au&nbsp;<strong><a href=\"http:\/\/visitpalafrugell.cat\/fr\/gastronomie\/centre-dinterpretation\/\">Centre d&rsquo;Interpr\u00e9tation de la Gastronomie La Cuisine en Catalogne,&nbsp;<\/a><\/strong>situ\u00e9e \u00e0 Palafrugell. Le Centre permet d&rsquo;en apprendre plus sur une multitude de choses: l&rsquo;\u00e9volution de la gastronomie au fil de l&rsquo;histoire et l&rsquo;\u00e9volution du tourisme dans l&rsquo;Empordanet.<\/p>\n<p style=\"font-weight: 400;\">En 1995, seize restaurants de la r\u00e9gion cr\u00e9\u00e8rent un collectif gastronomique sous le nom&nbsp;<strong>La&nbsp;<\/strong><a href=\"http:\/\/www.cuinadelempordanet.net\/\"><strong>Cuina de l\u2019Empordanet&nbsp;<\/strong><\/a><a href=\"http:\/\/www.cuinadelempordanet.net\/\">&nbsp;<\/a>dans le but de promouvoir la qualit\u00e9 gastronomique du territoire et de faire de l\u2019Empord\u00e0, une destination gastronomique de premier ordre.<\/p>\n<p style=\"font-weight: 400;\">De nombreux restaurants de notre r\u00e9gion l\u2019ont rejoint pour contribuer eux aussi \u00e0 la promotion de la gastronomie, notamment en organisant des journ\u00e9es et des campagnes gastronomiques en collaboration avec leurs municipalit\u00e9s.
